This is one of my favorite things to make in Austria, as I really miss empanadas! This was the closest I could get to them... and gladly, they are delicious!
Here is the recipe (12 empanadas):
- Mix 500gr Grated gouda cheese, 3 eggs, 3 tsp of sugar, 1 tsp of salt. The cheese has to be covered with egg. If you see that the mix is dry, then add another egg... if it is too wet, add more cheese.
- For the dough I use Tante Fanny's Frischer Blätterteig, a kind of puff pastry dough. I think many salted doughs would work for this.
- I use a Tupperware empanada maker to cut the circle shapes, put the mix inside and seal it.
- Once all the empanadas are prepared, I sprinkle sugar on top of them. And put them in the oven for as long as the dough package says.
