Some weeks ago, I was craving some Torta de Ricota, so I had to figure out how to make it!!! Was terrified, as I thought it would be crazy difficult. Let me tell you, it was a piece of cake ^^. The most difficult part was to find the Ricotta in Austria (Merkur!). Here is the recipe:
Ingredients:
Dough:
Butter 200g
Powdered sugar 120g
Salt 5g
Eggs 2
Flour 400g
Baking powder 1tsp
Filling:
Ricotta 600g
Sugar 120g
Egg yolk 3
Vanilla essence 1tsp
Starch 10g
-Mix the butter, the powdered sugar and the sugar. Add the eggs.
-Mix the flour with the baking powder. And add in the first mix.
-Make a dough ball and wrap it in plastic film. Let it rest in the fridge.
-Mix the Ricota with the sugar and then add the yolks and the vailla essence.
-Stretch the dough till it is 5mm.
-Butter a pie pan and add half dough in a base layer.
(Note: The good thing about this dough is that you can do it in parts and then stick them together!)
-Add the filling and then cover with a disk of dough.
-Bake at 170ºC for 40/45 minutes.
-Serve with powdered sugar on top :)
